The Oatmeal of Alford

Oats Baklava

Ingredients

1 cup rough oatmeal.
1 cup sugar.
1 cup self raising flour.
A pinch of salt.
½ tsp cinnamon.
1 tsp vanilla extract.
100g roughly chopped Pecans.
3 eggs.
¾ cup vegetable oil.

Sauce

1 cup water.
½ cup sugar.
1 spoon brandy.

Method

Put ingredients in a big bowl, by the order they are written.
Stir and pour into a small baking tin (Sherry uses 25cmX25cm).
Bake in 160C until golden (about 40 minutes).
The crust tends to grow golden very fast, so if the top is golden but the inside still runny-
cover tin with foil and keep baking until the cake is ready.
Slice diagonally (diamond shaped slices).
Mix the sauce ingredients and boil rapidly.
Pour on slices.
