The Oatmeal of Alford

Digestive biscuits

Ingredients

4 ozs. medium oatmeal.
4 ozs. wholemeal flour.
2 ozs. caster sugar.
¼ teaspoon salt.
½ teaspoon bicarbonate of soda.
3 ozs. butter or margarine.
1 small egg, beaten.

Method

Mix oatmeal, flour, sugar, salt and bicarbonate of soda.
Rub the butter in, add the egg and mix well.
Place the dough on a working surface sprinkled with oatmeal.
Roll out ½" thick, and cut into 3" rounds.
Place on a greased baking sheet and bake in a preheated oven (180C) for 10 - 15 minutes.
