The Oatmeal of Alford

Oatmeal scones #1

Ingredients

1 cup plain flour.
1 cup medium oatmeal.
2 ozs. margarine.
2 level teaspoons cream of tartar.
1 level teaspoon bicarbonate of soda.
Pinch salt.
Milk to mix.

Method

Sift the flour, salt, bicarbonate of soda and cream of tartar into a bowl and stir in oatmeal.
Cut the margarine into small pieces and rub into the flour.
Mix with milk to make a soft dough.
Turn the dough onto a board coated with flour.
Roll the dough out and cut into rounds or triangles.
Bake at 220C for 10 minutes or the triangles on a heated griddle for about 10 minutes, turning halfway through cooking time.
Serve with butter.
Makes 7 - 8.
