The Oatmeal of Alford

Ingredients

4 ozs. butter.
4 ozs. honey.
4 ozs. soft brown sugar.
4 ozs. S.R. flour.
4 ozs. medium oatmeal.
1 large egg.
1 level teaspoon ginger.
1 level teaspoon cinnamon.
6 tablespoons milk.

Method

Melt butter, honey and sugar together over a low heat.
Leave to cool.
Sift the flour, cinnamon and ginger into a bowl, stir in the oatmeal and add the melted mixture along with the well beaten egg and the milk.
Pour the mixture into a 6½" square greased and lined tin and bake at 160C for 1¼ hours or until the cake feels springy and shrinks away from the side of the tin.
Turn out onto a wire tray to cool and store for a day before serving.
Serve with butter.
