The Oatmeal of Alford

Perkins

Ingredients

4 ozs. plain flour.
4 ozs. fine oatmeal.
2 ozs. butter or margarine.
3 ozs. caster sugar.
1 level teaspoon baking soda.
½ teaspoon cinnamon.
½ teaspoon ginger.
¼ teaspoon mixed spice.
3 level tablespoons syrup.
1 oz. blanched almonds.

Method

Prepare a greased baking sheet.
Sieve flour and rub in butter.
Mix all the other ingredients except almonds and syrup.
Spoon pieces the size of a walnut onto a baking sheet, leaving room to spread, and flatten with a fork.
Place half an almond on each.
Bake in a moderate oven 180C for 10 minutes or until crisp.
Cool on a wire rack.
