The Oatmeal of Alford

Special potato scones

Ingredients

¼ cup oatmeal.
2 ozs. plain flour.
1 lb. potatoes.
Salt.

Method

Boil and mash potatoes, add a little salt and oatmeal.
Knead in as much flour as the mixture will take.
Roll out very thinly and cut into triangles.
Prick all over with a fork.
Brown on a griddle or frying pan, turning once.
Serve hot spread with butter.

The Irish way.

Serve with eggs and bacon, or for supper - heat under a grill, spread with butter and sprinkle with sugar.
