The Oatmeal of Alford

Oatmeal posset

Ingredients

1 pint milk.
2 tablespoons oatmeal.
2 teaspoons sugar.
1 tablespoon brandy.
¼ teaspoon salt.
¼ teaspoon grated nutmeg.

Method

Put the milk in a 2 pint saucepan and sprinkle in the oatmeal and salt.
Heat quickly, stirring until nearly boiling.
Remove from the heat and leave to stand for 10 minutes.
Press the mixture through a sieve into a similar saucepan, add sugar and nutmeg until almost boiling, stirring to prevent sticking.
Remove from heat, stir in brandy and serve at once.
Substitute ginger or allspice if preferred.
