The Oatmeal of Alford

Buttered Kail

Ingredients

1 lb. kail tops.
2 ozs. butter or margarine.
1 tablespoon pinhead oatmeal.
salt and pepper.

Method

Wash the kail, drain and chop finely.
Melt the butter in a heavy based pan with a tight fitting lid.
Add the kail and stir for a few minutes.
Cover and leave for 3 - 4 minutes.
Stir and cover again.
Leave for another 2 - 3 minutes and stir again.
It should have reduced in bulk and be soft and buttery.
Season and serve with oatmeal sprinkled on top.
