Ingredients
4 large herrings.4 ozs (100g) fine or medium oatmeal.
2 ozs (50g) butter.
1 tablespoon olive oil.
Salt and pepper.
lemon.
Method
Wash, gut and de-bone herrings.Sprinkle on pepper and salt and dip in oatmeal.
Heat butter and oil in frying pan.
Fry herrings for 4 minutes on each side until browned, do not burn oatmeal.
Drain on absorbant paper.
Serve with lemon.
