The Oatmeal of Alford

Mealie Pudding

Ingredients

3 good handfulls of oatmeal.
1 large onion, finely chopped.
2 ozs margarine.
Finely chopped parsley.
Salt and pepper.

Method

Put all ingredients into a suitable bowl and mix well.
Form into a ball and tie loosely into a pudding cloth which has been wrung out in very hot water and coated with flour.
Plump it into boiling water or stock, or even broth, and cook for 2½ hours.
