Ingredients
4 x 4oz. (120g) Scottish salmon steaks.2oz. (60g) fine or medium oatmeal.
2oz. (60g) melted butter.
4 tablespoons (60ml) whisky, optional.
salt & pepper to taste.
Method
Place salmon in a small, flat dish and brush with half the whisky, if desired.Leave for 10 minutes, turn them over and brush the other side with the remaining whisky.
In a shallow dish, mix the oatmeal and seasoning together.
Thoroughly coat the steaks in oatmeal, pressing it on well.
Preheat grill and lightly grease grill pan.
Brush steaks with half the melted butter and grill on a high heat for 2 minutes.
Turn steaks over and brush with remaining butter.
Grill for 2 minutes.
Cook for a further 1 - 2 minutes on either side (depending on thickness) until steaks are just cooked.
Pierce thickest part with a skewer to be sure it is just firm, and turned pale pink.
Serve with salad and bread or baked potato. garnish with lemon and parsley.
