Pastry
4 ozs. oatmeal.4 ozs. flour.
2 ozs. margarine.
1 teaspoon baking powder.
¼ teaspoon salt.
Filling
1 lb. potatoes.1 lb. herring.
1 leek.
2 teaspoons vinegar.
1 tablespoon seasoned flour.
Method
Cut the margarine into small pieces and rub into the dry ingredients.Mix with cold water to form a stiff paste.
Roll out the pastry to cover the pie dish.
Clean and bone the herring and cut in half.
Dip in vinegar and then seasoned flour.
Roll up and put in pie dish.
Cut the leek into small pieces and slice the potatoes.
Add enough water to come halfway up the pie dish.
Season with salt and pepper, cover with the prepared pastry.
Bake in a moderate oven for 1 hour.
