The Oatmeal of Alford

Mushroom and Cream Cheese Quiche

Ingredients

1 pack closed cup mushroom (about 250g).
2 large onions, chopped.
1 pack cream cheese (about 300g).
½ cup of milk.
2 eggs.
½ cup of oatmeal.
1tblsp plain flour.
Salt, pepper, a pinch of nutmeg (nice with the mushrooms!)

Method

Fry the onion and mushrooms and mix with the rest of the ingredients (if it looks too runny add another spoon of plain flour).
Grease a deep pyrex dish (about 30cm by 25) and put in all the mixed ingredients.
Bake in a preheated oven (160C) until golden.

This quiche is quite soft, so if you don't like it the first time you make it, you should add a little more flour and oatmeal next time.
You can swap the mushrooom for sweetcorn, spinach or broccoli.
