Oatmeal Stuffed Breast of Lamb

Ingredients

1 boned breast of lamb, approximately 3½ lbs.
1 tablespoon oil.
3 ozs. breadcrumbs.
Grated rind of 1 orange or lemon.
1 small onion , peeled and finely chopped.
2 ozs. oatmeal.
1 teaspoon dried mixed herbs.
1 egg, beaten.
Salt and pepper.
1 teaspoon mild curry powder (optional).

Method

Preheat oven to moderately hot, 190C, 375F, Gas mark 5.
Prepare meat and if joint is rolled, cut string, open and roll out.
Trim off excess fat.
Heat the oil in a pan and fry the onion very gently until soft.
Remove from heat and add the breadcrumbs, oatmeal, rind, herbs, curry powder and seasoning and mix well.
Bind the mixture together with the beaten egg.
Spread the stuffing along the meat and roll up.
Tie securely with string.
Bake in preheated oven for 1½ hours or longer if well done is required.
