The Oatmeal of Alford

Stuffed Skirt

Ingredients

1 lb. skirting steak.
1 oz. margarine.
1 oz flour.
1 pint stock.
1 onion peeled and sliced.
Carrot and turnip.
1 level teaspoon salt.
Pepper.

Stuffing

4 ozs. medium oatmeal.
2 ozs. margarine.
1 tablespoon chopped parsley.
1 small onion.
salt and pepper.
1 slice bread (breadcrumbs).

Method

Ask the butcher to leave the steak in one piece.
Remove the skin from one side only.
Loosen the skin on the second side to form a pocket.
Mix together all the ingredients for the stuffing and put into the prepared pocket.
Roll up and secure with string.
Brown the meat and onion in the melted margarine.
Add stock and seasoning and simmer for 2½ hours.
Add vegetables 1 hour before serving.
Serve the meat sliced, thicken gravy and strain over meat.
Garnish with vegetables.
