The Oatmeal of Alford

Trout in Oatmeal with Lemon Sauce

Ingredients

4 Fresh Trout.
100g(4oz) fine or medium Oatmeal.
Salt and pepper.
Oil for frying.

Lemon sauce

1 level teaspoon sugar.
½ pint milk and stock (mixed).(for stock use chicken or fish cube).
Rind and juice of 1 lemon.
25g(1oz) margarine.
25g(1oz) plain flour.

Method

Split and bone the trout and wash well.
Mix the oatmeal with ¼ teaspoon salt.
Coat the trout on both sides with oatmeal.
Place into hot oil and fry with the skin side uppermost.
Fry for 3 minutes on each side.
Serve with lemon sauce or lemon wedges dipped in chopped parsley.

Lemon sauce

Simmer the lemon rind in the milk and stock for 5 minutes.
Strain and use the liquid as follows.
Put the margarine, flour, and stock into a medium saucepan and heat, whisking all the time over a moderate heat.
Bring to the boil and continue to cook for 3 minutes, stirring all the time.
When the mixture has thickened, stir in the lemon juice, sugar and season to taste.
Serve with the trout in oatmeal.
Serves 4.
